Sweet and Sour Chicken

Ingredients

Chicken

  • 2 chicken breasts (cut into bite-sized pieces)
  • 2 tbsp cornflour
  • 1 egg
  • Salt and pepper
  • Oil for frying

Vegetables

  • 1 bell pepper (chunked)
  • ½ onion (chunked)
  • 1 small tin pineapple chunks (drained)

Sweet and Sour Sauce

  • 3 tbsp ketchup
  • 2 tbsp vinegar (rice vinegar or white vinegar)
  • 3 tbsp sugar
  • 1 tbsp soy sauce
  • 150ml pineapple juice (from the tin)
  • 1 tsp cornflour
  • 2 tbsp water

Instructions

Prepare the Chicken

  1. Season the chicken with salt and pepper.
  2. Mix the chicken with the egg and cornflour to coat.
  3. Heat oil in a frying pan or wok.
  4. Fry the chicken pieces until golden and cooked through.
  5. Remove and set aside.

Make the Sauce

  1. In a bowl mix ketchup, vinegar, sugar, soy sauce, and pineapple juice.
  2. Mix cornflour and water separately to create a slurry.

Stir Fry

  1. Cook the onion and pepper in a hot pan for about 2–3 minutes.
  2. Pour in the sauce mixture and bring to a simmer.
  3. Add the cornflour slurry and stir until the sauce thickens.

Finish

  1. Add the pineapple chunks and cooked chicken.
  2. Toss everything together until well coated.

Notes

  • Serve with steamed rice, fried rice or 3-Ingredient Flatbread.
  • Adjust sugar or vinegar depending on how sweet or tangy you like the sauce.
  • For extra crisp chicken, coat the chicken twice in cornflour before frying.
