# Sweet and Sour Chicken ## Ingredients ### Chicken - 2 chicken breasts (cut into bite-sized pieces) - 2 tbsp cornflour - 1 egg - Salt and pepper - Oil for frying ### Vegetables - 1 bell pepper (chunked) - ½ onion (chunked) - 1 small tin pineapple chunks (drained) ### Sweet and Sour Sauce - 3 tbsp ketchup - 2 tbsp vinegar (rice vinegar or white vinegar) - 3 tbsp sugar - 1 tbsp soy sauce - 150ml pineapple juice (from the tin) - 1 tsp cornflour - 2 tbsp water ## Instructions ### Prepare the Chicken 1. Season the chicken with **salt and pepper**. 2. Mix the chicken with the **egg and cornflour** to coat. 3. Heat oil in a frying pan or wok. 4. Fry the chicken pieces until **golden and cooked through**. 5. Remove and set aside. ### Make the Sauce 6. In a bowl mix **ketchup, vinegar, sugar, soy sauce, and pineapple juice**. 7. Mix **cornflour and water** separately to create a slurry. ### Stir Fry 8. Cook the **onion and pepper** in a hot pan for about **2–3 minutes**. 9. Pour in the sauce mixture and bring to a simmer. 10. Add the cornflour slurry and stir until the sauce thickens. ### Finish 11. Add the **pineapple chunks and cooked chicken**. 12.
