Fluffy Buttermilk Pancakes

Ingredients

  • 200g plain flour
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp salt
  • 1 tbsp sugar
  • 1 egg
  • 300ml buttermilk
  • 1 tbsp vegetable oil (plus extra for the pan)

Optional:
- Sultanas or blueberries
- Lemon juice and honey for serving

Instructions

  1. In a bowl, mix flour, baking powder, bicarbonate of soda, salt, and sugar.
  2. In another bowl, whisk egg, buttermilk, and oil.
  3. Pour the wet ingredients into the dry ingredients.
  4. Stir gently until just combined (small lumps are fine).
  5. Heat a frying pan over medium heat and add a little oil.
  6. Pour small amounts of batter into the pan to form pancakes.
  7. Cook until bubbles appear in the centre, then flip.
  8. Cook the other side for about 1–2 minutes until golden.

Notes

  • Wait for bubbles in the middle, not just the edges, before flipping.
  • Keep heat medium to avoid burning the outside before the inside cooks.
  • Great with honey, lemon, butter, or maple syrup.
