# Fluffy Buttermilk Pancakes ## Ingredients - 200g plain flour - 1 tsp baking powder - ½ tsp bicarbonate of soda - ½ tsp salt - 1 tbsp sugar - 1 egg - 300ml buttermilk - 1 tbsp vegetable oil (plus extra for the pan) Optional: - Sultanas or blueberries - Lemon juice and honey for serving ## Instructions 1. In a bowl, mix **flour, baking powder, bicarbonate of soda, salt, and sugar**. 2. In another bowl, whisk **egg, buttermilk, and oil**. 3. Pour the wet ingredients into the dry ingredients. 4. Stir gently until just combined (small lumps are fine). 5. Heat a frying pan over **medium heat** and add a little oil. 6. Pour small amounts of batter into the pan to form pancakes. 7. Cook until **bubbles appear in the centre**, then flip. 8. Cook the other side for about **1–2 minutes** until golden. ## Notes - Wait for bubbles in the **middle**, not just the edges, before flipping. - Keep heat medium to avoid burning the outside before the inside cooks. - Great with **honey, lemon, butter, or maple syrup**.
