Fluffy Buttermilk Pancakes
Ingredients
- 200g plain flour
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp salt
- 1 tbsp sugar
- 1 egg
- 300ml buttermilk
- 1 tbsp vegetable oil (plus extra for the pan)
Optional:
- Sultanas or blueberries
- Lemon juice and honey for serving
Instructions
- In a bowl, mix flour, baking powder, bicarbonate of soda, salt, and sugar.
- In another bowl, whisk egg, buttermilk, and oil.
- Pour the wet ingredients into the dry ingredients.
- Stir gently until just combined (small lumps are fine).
- Heat a frying pan over medium heat and add a little oil.
- Pour small amounts of batter into the pan to form pancakes.
- Cook until bubbles appear in the centre, then flip.
- Cook the other side for about 1–2 minutes until golden.
Notes
- Wait for bubbles in the middle, not just the edges, before flipping.
- Keep heat medium to avoid burning the outside before the inside cooks.
- Great with honey, lemon, butter, or maple syrup.
