Crispy Roast Potatoes
Ingredients
- 800g potatoes (Maris Piper or King Edward work well)
- 2–3 tbsp oil or duck fat
- 1 tsp salt
- Black pepper
- Optional: rosemary or garlic
Instructions
- Preheat oven to 200°C (180°C fan).
- Peel and cut potatoes into large chunks.
- Boil in salted water for 8–10 minutes until just starting to soften.
- Drain and shake the potatoes in the pan to rough up the edges.
- Heat oil or duck fat in a roasting tray in the oven for 5 minutes.
- Carefully add the potatoes to the hot oil.
- Turn to coat and season with salt and pepper.
- Roast for 40–50 minutes, turning halfway through, until crispy and golden.
Notes
- Rough edges create extra crispiness.
- Duck fat adds incredible flavour.
- Add garlic or rosemary in the final 20 minutes of cooking.
