# Crispy Roast Potatoes ## Ingredients - 800g potatoes (Maris Piper or King Edward work well) - 2–3 tbsp oil or duck fat - 1 tsp salt - Black pepper - Optional: rosemary or garlic ## Instructions 1. Preheat oven to **200°C (180°C fan)**. 2. Peel and cut potatoes into large chunks. 3. Boil in salted water for **8–10 minutes** until just starting to soften. 4. Drain and shake the potatoes in the pan to rough up the edges. 5. Heat oil or duck fat in a roasting tray in the oven for **5 minutes**. 6. Carefully add the potatoes to the hot oil. 7. Turn to coat and season with **salt and pepper**. 8. Roast for **40–50 minutes**, turning halfway through, until crispy and golden. ## Notes - Rough edges create **extra crispiness**. - Duck fat adds incredible flavour. - Add garlic or rosemary in the final 20 minutes of cooking.
