# Traditional Irish Soda Bread ## Ingredients - 500g plain flour (or malted flour) - 1 tsp baking soda - 1 tsp salt - 400ml buttermilk Optional: - 1 tsp honey (adds slight sweetness) - Handful of sultanas or seeds ## Instructions 1. Preheat oven to **200°C (180°C fan)**. 2. In a large bowl, mix the **flour, baking soda, and salt**. 3. Add the **buttermilk** and mix until a soft dough forms. 4. Turn the dough onto a lightly floured surface. 5. Knead **very lightly** (about 20–30 seconds) just until it comes together. 6. Shape into a round loaf. 7. Place onto a baking tray lined with parchment. 8. Cut a **deep cross on the top** of the loaf (traditional and helps it bake evenly). 9. Bake for **30–35 minutes** until golden brown and hollow-sounding when tapped on the bottom. ## Notes - Do **not over-knead**; soda bread should be quick and rustic. - If the dough feels too wet, add a little extra flour. - Best eaten **warm with butter**. - Keeps for 2 days and can be toasted.
